Our focus on the wellbeing of our customers started with the selection of materials used in our restaurant to ensure the lowest possible environmental impact and maximum comfort for all of you.
Research and experimentation are only the main levers of our philosophy, starting from the creation of the doughs, passing through the creation of the combinations, to the care of the staff in the dining room to create an atmosphere that makes you live a real sensory experience.
Raw materials
The absolute stars of all our dishes are the raw materials, each of which represents excellence in its field. We select them from small producers with a preference for slow food presidia, organic farms and sustainable production.

The flours
They contain the wheat germ in its full essence. Thanks to a milling process that uses state-of-the-art technology, but respecting the ancient milling tradition, our flours preserve their nutritional and functional properties. In 2018, the Antico Pomodorino di Manduria project was born, now a Slow Food Presidium. We have revived the ancient seed of this endangered tomato. We are the growers of the tomato you find on our pizzas.
