Padellino focaccia
soft and fragrant

Neapolitan pizza from Puglia · Latiano
Open tonight 19:30 – 00:00

Our research starts with the selection of flours and the continuous study of doughs, looking for the right balance of flavour, lightness and texture.
Three doughs, three different ways of reading pizza:

soft and fragrant

with a pronounced, airy crust

thin and crisp
Different doughs, the same idea of pizza.

It all starts with half a glass of seeds of a tomato that had all but disappeared, kept by an elderly farmer. With Alessandro and Cosimo, two young growers, we put it back in the field. Today it is the base of every red pizza: semi-dried, whole in brine, or as a passata.
Traced thanks to an elderly farmer who had kept them safe.
Grown without irrigation and picked by hand, the old way.
Our pride, in three versions from a single land.

Menabrea on tap, Italy's oldest active brewery. In bottles Baladin, Birra del Borgo, Toccalmatto, Birranova. Then gins from Puglia, Metodo Classico sparkling wines from Puglia, and cocktails created with Sotto Spirito.
The mobile oven was born from the wish to bring the experience outside our dining room. Weddings, pre-wedding parties, private and company events: we arrive, light the Valoriani oven and bake the same pizza you eat in Latiano right in front of your guests.
